Coffee Cake
  1. 1 apple, diced (Add a few squirts of lemon to bring out apple flavor)
  2. 1 cup almond meal
  3. 3 Tbsp. coconut flour (sifted)
  4. 3 eggs, beaten
  5. 1/4 cup melted coconut oil
  6. 2 tablespoons Grade B Maple Syrup
  7. 1 Tsp Vanilla Extract
  8. 1 1/2 Tbsp Cinnamon
  9. 1/2 tsp. baking soda
  10. Generous Pinch of Salt
  11. 2 Tbsp coconut milk (to be added to batter after it settles)
For Streusel
  1. 1/2 cup almond meal
  2. 2 tsp. cinnamon
  3. 1 Tbsp. maple syrup
  4. 1 Tbsp. cold butter
  5. Pecans (optional)
For Icing
  1. 1/2 C Coconut Cream
  2. 1/4 C melted coconut oil
  3. 3 Tbsp Pure Maple Syrup
  4. 1/2 Tsp Vanilla
  5. 1/2 Tsp Lemon Juice (fresh)
  1. Preheat oven to 350F and grease 7" round cake tin
  2. Combine almond meal, sifted coconut flour, baking soda, cinnamon, and salt in a large bowl and whisk together.
  3. In a separate bowl whisk together eggs, maple syrup, vanilla and coconut oil. Combine wet and dry ingredients, making sure there are no clumps.
  4. Stir in the apples and let sit for 2-3 minutes, once your batter has thickened, stir in your 2 Tbsp of coconut milk, 1 at a time until your mixture thins slightly.
  5. Pour into greased cake pan and set aside.
  6. Combine all streusel ingredients (except pecans) in a small bowl, cutting in cold butter with your fingers until it's about pea size.
  7. Distribute streusel topping over cake, adding nuts to taste.
  8. Bake for 20 minutes, remove from oven and loosely tent with foil. Continue baking for 20-25 minutes or until toothpick inserted into center comes out clean.
  9. While cake is in the oven combine ingredients for icing, mixing well, then set in the refrigerator for the duration of the baking. Pipe icing on to *completely cooled* cake and enjoy!
  1. Make sure to stir icing before piping it onto cake -- if it's too thick, let it sit at room temperature for a few minutes.
